SERVINGS PER RECIPE 8
- 60g KetoVie Café Kwik Mix (about ½ cup)
2.5g Truvia® Brown Sugar Blend (about 2/3 tsp)
2.6g cinnamon, ground (about 1 tsp)
1g vanilla pure extract (about ¼ tsp)
28g egg, raw, mixed well (about half of a large egg)
30g butter (about 2 Tbs)
- Pre-heat oven to 350 degrees F.
Weigh and mix together in a large bowl all dry ingredients- Ketovie Kwik Mix, Truvia-brown sugar blend, and cinnamon.
Weigh butter and melt in the microwave. Allow butter to cool slightly.
Crack 1 egg into small bowl and mix well. Weigh egg mixture.
Weigh vanilla. Mix butter, egg, and vanilla in a small bowl. Whisk egg as you slowly add butter.
Pour the egg mixture into large bowl of dry ingredients. Use a spatula to form the dough.
Cover bowl with plastic wrap and chill in the refrigerator for at least 30 minutes. Hint: the longer you chill the dough, the easier it will be to roll out.
Place chilled dough onto parchment paper. Roll out dough to 1/8-1/4 inch thickness. Hint: Use plastic wrap to place on top of dough to help reduce dough sticking to rolling pin.
Remove plastic wrap and transfer parchment paper to cookie sheet.
Use a pizza cutter to cut 8 cracker squares. Use a fork or toothpick to make cracker indentations.
Bake crackers for 15-20 minutes. For a crisper cracker, let cool and then bake for additional 5-10 minutes.
Note: If you want smaller crackers for fewer calories or carbs, cut dough into smaller squares and divide total squares by what batch provides.
