- 100g KetoVie Café Wholesome 3.5:1 Bread Roll (2 rolls)
120g ground beef, 80% lean (4 oz)
50g butter (3 Tbs + 1/2 Tbs)
26g Heavy cream, 36% (1 Tbs + 2 tsp)
13g egg, mixed well (1/4 of one large egg)
5g parmesan, finely shredded (1 Tbs)
5g parsley, raw, finely chopped (1 Tbs + 1 tsp)
1g garlic powder (1/4 tsp)
0.5g basil, dry (1 tsp)
0.5g oregano, dry (1/2 tsp)
- Wash parsley and allow to dry on paper towels.
Tip: If still very wet consider using a salad spinner to remove excess water.
Quarter 2 bread rolls and pulverize into bread crumbs in a food processor.
Tip: a mini-food processor works well for this job.
Weigh all ingredients.
Melt butter in microwave (approximately 20 seconds.)
Mix all ingredients in a large bowl until a evenly mixed.
Refrigerate meat mixture for 10-15 minutes.
Meanwhile, pre-heat oven to 400 degrees F.
Weigh out 40g balls of meat mixture and place balls in cups of a full sized muffin tin.
Tip: you can also use full sized silicon muffin cups.
Bake meatballs at 400 degrees for 20 minutes.
Tip: Keep a close eye on your cooking meatballs. Fat will bubble up and you want to make sure it does not bubble over!
Remove meatballs from the oven and allow to cool in the muffin tin.
Tip: As your meatballs cool, all fat will be re-absorbed back into the meatballs.
