Salmon with Cashew Cream 3:1

Serves: 2

Ingredients:

  • 75g salmon
  • 48g broccoli
  • 12g cashew nuts
  • 170g heavy cream
  • 3 sprigs dill
  • 2 tbsp. olive oil

Method:

  • Microwave broccoli for 4-5 minutes until cooked to your liking.
  • Fry salmon in oil for 5 mins.
  • Add cashews and stir for 2 minutes.
  • Add cream and stir for 3 minutes.
  • Add dill and stir for a further minute.
  • Cut the salmon in half to check it is cooked through.
