Ingredients:
- 1 tsp (5g) egg, raw, mixed well
- 1 tsp (2g) vanilla extract
- 1 Tbs (15g) heavy cream
- 1 Tbs + 1 tsp (20g) KetoVie 4:1 Vanilla
- 4 Tbs (28g) KetoVie Café Kwik Mix
- 4 Tbs (30g) strawberries, raw
Method:
- Preheat oven to 350 degrees.
- Line a small muffin tin with a muffin liner or grease.
- Add egg and vanilla extract to Kwik Mix and stir to combine.
- Drop mixture into one muffin cup and smooth to even. Place water in the remaining cups.
- Bake for 15-17 minutes; or until edges are golden brown and centre is cooked.
- While muffins are baking, using a mixer, whip KetoVie and cream until medium to stiff peaks form, about 2-3 minutes.
- Place cream in a bowl and top with the shortcake.
- Sprinkle on the strawberries and serve.
