Keto Christmas Dinner 2:1

Serves: 1

Ingredients:

  • 42g chicken thigh
  • 5g fresh cranberry sauce (Trader Joes)
  • 5g orange slice
  • 12g sharp cheddar cheese
  • 15g Butter
  • 44ml heavy cream
  • 30g broccoli, cut into florets
  • 25g carrots, thinly sliced
  • 0.5 tbsp. olive oil

Method:

  • Preheat oven to 400 F.
  • Boil carrots for 7-10 minutes.
  • Mix chicken with orange and cranberry in a small oven dish, and place in the oven for 10-12 minutes until cooked through
  • Place broccoli, butter and oil in a small oven dish and microwave for 2-3 minutes. Cover in cream and cheese and then oven cook for 5 minutes at 400 F.
  • Serve the chicken, creamy broccoli and carrots together on a plate, and enjoy!
