Egg, Avocado & Halloumi Brunch 3:1

Serves: 1

Ingredients:

  • 25g egg yolks
  • 20g bell peppers, finely chopped
  • 25g halloumi cheese (Shepards of Cyprus)
  • 70g avocado
  • 21g butter

Method:

  • In 2/3 butter, fry the egg and bell peppers for 2-3 minutes.
  • In the remaining butter, fry the halloumi for a few minutes on each side until golden brown.
  • Slice the avocado, and serve with the halloumi and scrambled egg.
