Enjoy these Gingerbread Cookies with Maple Cream Cheese Frosting.
Step 1: Gather Ingredients
Gingerbread Cookies:
0.5 grams cinnamon, ground (about 1/2 tsp)
1 gram ginger, ground (about 1 tsp)
10 grams egg (raw, mixed well) (about 2 tsp)
8 grams butter (about 2 tsp)
15 grams KetoVie Kwik Mix (about 1 Tbsp)
Provides: 142 kcal, 14.02g fat, 2.3g protein, 1.38g net carbohydrate, 3.81:1 ratio
Makes 1 cookie
Maple Cream Cheese Frosting:
1 gram pure vanilla extract (about 1/8 tsp)
1 gram pure maple syrup (about 1/8 tsp)
15 grams cream cheese-Philadelphia (about 1 Tbsp)
5 grams butter (about 1 tsp)
Provides: 95 kcals, 9.18g fat, 1.11g protein, 1.55g net carbohydrates; 3.45:1 ratio
Makes 1 serving
Tip: The Gingerbread Cookies (3.8:1) vary slightly in ratio from the Maple Cream Cheese Frosting (3.5:1). Try adding some heavy cream or butter to the frosting recipe to bring ratio up to 3.8:1 to match.
Step 2: Preheat oven to 350 degrees.
Step 3: Line a small baking tray with parchment paper.
Step 4: Weigh the butter, melt and allow to cool slightly.
Step 5: Weigh the egg and mix well with cooled butter.
Step 6: Add 2-3 drops of liquid stevia for sweetness. (OPTIONAL)
Step 7: Combine all dry ingredients and mix well.Add wet ingredients to dry ingredients and mix well until a smooth dough ball is formed.
Step 8: Roll into a ball and place on baking tray. Using your hands or a spoon press on the dough until a round cookie shape is formed.
Step 9: Bake at 350 degrees for 7-8 minutes. Meanwhile begin preparation of Maple Cream Cheese Frosting.
Step 10: Weight all ingredients for Maple Cream Cheese Frosting and mix until smooth. Once Gingerbread cookie is cooled, spread evenly on cookie. Enjoy!
Tip: If not mixing well, try popping frosting into microwave for 10-15 seconds before spreading onto cookie.
